Effect of Hydroxypropyl methylcellulose from oil palm empty fruit bunch on oil uptake and physical properties of French fries

Oil palm empty fruit bunches (OPEFB) can be used as raw material for Hydroxypropyl Methylcellulose (HPMC). HPMC a French fries coating to reduce oil uptake. This research aims study the utilization of OPEFB coating. consists two stages. The first stage is cellulose extraction and synthesis. synthesis through alkalization, methylation, propylation, neutralization. second use with different concentrations (0, 1, 2, 3%). Potatoes that have been peeled washed, cut lengthwise thickness about 0.5 cm. Further dipped in solution 10 seconds, then carried out frying pan. from characterized by methyl hydroxypropyl groups found at wavenumber 2891.30 cm-1, ring pyranose 995.79 cm-1 hydroxyls (OH) 3371.10 cm-1. 3% absorption 16.09%. higher concentration HPMC, will fat content but increase moisture texture become softer. preferred type was 1%.
